An amazing(ly) easy, Gourmet Veggie Burger!



I thought I'd try a new approach on the sometimes *yawn* boring veggie burger. I usually dislike most veg burgers i try, and usually avoid them. BUT, the ONLY one i think is FANTASTIC is AMY's Veggie Quarter Pounders. These babies taste amazing and have a whopping 21 grams of protein which is about the same as a chicken breast. So give 'em a go and try this recipe to mix it up a bit! Enjoy!

EASY Gourmet Veggie Burger-

1 Amy's Veggie Quarter Pounder
1 Ezekiel sprouted grain hamburger roll
1 handful of baby spinach
1 handful of arugula
3 shiitake mushrooms
sliced avocado 3-4 pieces
1 slice of organic white cheddar (optional)

In a small sauté pan, add a tablespoon of olive oil and heat over medium-low flame. Add shiitake, arugula and spinach. Cover and Sauté until greens are wilted and mushrooms are tender. Remember to stir them while cooking! Remove and place on a plate.
Add a little more oil to the pan and place in the veggie burger. Cover and brown on both side and heat till warm, DON'T overcook it, it's not meat! Add the cheese on at this point if you want it. Remove from heat.

Toast the bun in your toaster or toaster oven, and place burger on, sauteed veggies and sliced avocado on top.

then... EAT IT! =)
